Jamaica has won the prestigious title of Culinary Champion of the Caribbean at the 2023 Taste of the Caribbean competition, held in Miami, Florida. The Jamaican team, led by Chef Andre Fowles, impressed the judges with their creative and delicious dishes, showcasing the rich and diverse flavors of the island nation.

Chef Andre Fowles is not your typical chef. He is a Jamaican-born, New York-based, award-winning culinary artist who specializes in Caribbean cuisine with a modern twist. He is the executive chef of Miss Lily’s, a popular restaurant chain that celebrates the culture and flavors of the Caribbean islands. He is also a frequent guest on cooking shows, such as Chopped, Beat Bobby Flay, and Cooks vs. Cons, where he showcases his skills and creativity.

Chef Fowles started his culinary journey at the age of 17, when he enrolled in the Runaway Bay HEART Academy in Jamaica. There, he learned the fundamentals of cooking and developed a passion for his native cuisine. He then moved to New York in 2008, where he worked at various restaurants, including The River Cafe, The Food Network Kitchen, and The Plaza Hotel. He also honed his craft under the mentorship of renowned chefs, such as Marcus Samuelsson, Jean-Georges Vongerichten, and Sean Brock.

In 2015, he joined Miss Lily’s as the executive chef, where he oversees the menu development and operations of four locations in New York, Dubai, and Negril. He also launched his own catering company, Everything Food by Andre Fowles, which offers customized menus for private and corporate events. His signature dishes include jerk chicken, curry goat, ackee and saltfish, and coconut rice and peas.

Chef Fowles has received numerous accolades for his work, such as the Jamaica Observer Food Awards Chef on the Rise in 2016, the StarChefs Rising Star Chef Award in 2017, and the Caribbean Journal’s Caribbean Chef of the Year in 2019. He is also a proud ambassador for Grace Foods, Jamaica’s leading food manufacturer and distributor. He uses their products to create authentic and innovative dishes that reflect his heritage and vision.

The team competed against 11 other Caribbean countries in various categories, such as seafood, beef, vegetarian, pastry, and bartender. Jamaica won gold medals in all categories, except for vegetarian, where they earned a silver medal. The team also won the Best Use of Chocolate award for their decadent chocolate cake with rum cream and coconut.

Chef Fowles said he was proud of his team and their achievement. “We worked hard to prepare for this competition and to represent our country. We wanted to show the world that Jamaica has a lot to offer in terms of cuisine and culture. We are honored and humbled by this recognition,” he said.

The Taste of the Caribbean is an annual event organized by the Caribbean Hotel and Tourism Association (CHTA), which aims to promote the culinary excellence and diversity of the region. The event also provides training and networking opportunities for chefs and bartenders from different countries.

CHTA President Karolin Troubetzkoy congratulated Jamaica and all the participants for their outstanding performance. “The Taste of the Caribbean is a celebration of our gastronomic heritage and a showcase of our talent. We are proud of all the teams who participated and demonstrated their passion and skill. Jamaica deservedly won the title of Culinary Champion of the Caribbean, but they also inspired us all to keep innovating and improving our culinary offerings,” she said.
